Miso Goreng

300g nest noodles

Marinade:
juice of 1 lime
5 table spoons soy sauce
2 table spoons honey
3 table spoons vegetable stock
3 table spoons sambal oelek

2 cloves of garlic, chopped
3 table spoons ginger, chopped
1 chili, chopped
2 table spoons sesame oil

3 carrots, cut into strips
2 yellow peppers, cut into strips

2 pak choi, cut in strips
250g bean sprouts
2 spring onions, cut in rings
4 eggs

4 table spoons peanuts, chopped
1 bunch of cilantro, chopped

Cook nest noodles 5 minutes in salted water until al dente. Drain and rinse with cold water.

Marinade: Mix all ingredients.

Fry garlic, ginger and chili in sesame oil. Add carrots and peppers and fry 1 minute. Add pak choi, bean sprouts and spring onions and fry another minute.

Push vegetables to the side of the pan and beat the eggs in the middle. Stir continuously until the eggs begin to set.

Add nest noodles and marinade and mix well. Fry 2 minutes.

Arrange noodles on plates and garnish with peanuts and cilantro.
