Celery apple coconut soup

Celery apple coconut soup
Recipe serves 4
Preparation time: 30min

1 onion, cut in stripes
2 table spoons oil
½ knob celery, cut in cubes
1 stalk celery
3 apples
salt and pepper
1000ml vegetable stock
250ml coconut milk

2 table spoons roasted, salted peanuts
1 table spoon oil

Brown onion in hot oil during 5 minutes. Add knob celery and fry another 5 minutes.

Cut stalk celery into fine slices. Put half of the leaves aside. Fry the other half of the leaves with the celery slices.

Peel 2 apples, cut in halves and remove core. Cut into cubes. Add to the celery and fry, season with salt and pepper.

Add coconut milk and bring to boil. Puree with a blender.

Cut the third apple in halves, remove core and cut into cubes. Brown in hot oil.

Pour the soup into 4 bowls and add the browned apple cubes.

Garnish soup with celery leaves and peanuts.
