Japanese Dressing:
2 table spoons miso paste
3 table spoons mirin (sweet Japanese rice wine)
2 table spoons sake
1 table spoon white balsamic vinegar
2 table spoons soya sauce
2 table spoons sesame oil
3 table spoons sunflower oil
½ radish
1 apple
2 smoke trout filet
2 handful alfalfa seedlings
2 handful beetroot seedlings
For the Japanese dressing mix all ingredients.
Cut radish into slices, apple into thin sticks and the trout filets into bite-sized pieces.
Serve on four plates, spread seedlings on top and drizzle with dressing.
Tip: Miso paste and mirin are available at asian supermarkets.
