For 3 bread loaves of 350g
375g apples
125g dried fruits (ex. figs, pears, dates, apricots)
125g dried cranberries
75g mixed nuts
50g rum
50g water
300g spelt flour
10g baking powder
1 tea spoon gingerbread spice
100g cane sugar
1 table spoon cocoa powder
1 egg
Peel apples and grate with a grater. Chop dried fruits and mixed nuts roughly.
Mix grated apples, dried fruits, dried cran berries, nuts and rum and soak in water. Place over night in the fridge.
Heat up oven to 140°C.
In a bowl mix the soaked fruits with the leftover ingredients by hand to form a dough.
Put flour on the table. Divide dough into 3 pieces and form 3 bread loaves. Place on a baking tray with baking paper and bake 1 hour.
Tip: The apple bread keeps in the freezer up to 6 months.
