1 cauliflower
2 table spoons olive oil
salt and pepper

1 table spoon linseed
1 tea spoon mustard seeds
1 tea spoon crushed coriander seeds

3 table spoons unsalted butter
1 shallot, chopped
2 table spoons apple vinegar

Preheat oven to 210° C.

Cut cauliflower into pieces. Marinate with olive oil and seaon with salt and pepper. Spread cauliflower pieces on a baking try lined with baking paper and roast 20-30 minutes in the oven.

Roast linseed in a frying pan without fat on middle heat for 10 minutes. Add mustard and coriander seeds and roast another minute. Take out of the pan.

Heat up the butter in the frying pan untill it gets brown and starts to foam and becomes beurre noisettte. Add chopped shallots and brown shortly. Deglaze with apple vinegar.

Add cauliflower and seeds to the beurre noisette.

Tipp

Beurre noisette is slightly browned melted butter. It gets a nut-like taste through the lactose that caramelizes.
