3 egg whites (90g)
180g sugar
cocoa powder
Preheat oven to 85°C (fan oven).
Beat egg whites and 60g sugar until fluffy. Gradually add another 60g of sugar while beating. Fold the remainig 60g of sugar at the end.
With an icing bag form small baisers on a with baking paper lined baking tray. Dust with cocoa powder.
Let baisers 3 hours dry in the oven.
Tip: Add the sugar in 3 steps to the egg whites to get it stiff and light at the same time. If you add all the sugar in just one step, the egg white does not get the desired consistency.
