300g icing sugar
60g cocoa powder
1 pinch of salt
100g egg white
1 table spoon vanilla paste
150g dark chocolate (60% cocoa), chopped
fleur de sel
Preheat oven to 180°C (circulating air).
In a bowl mix icing sugar, cocoa powder and salt.
Mix egg white and vanilla paste and add into the bowl. Whisk 5 minutes until it becomes a viscous fluid. Add chopped chocolate.
Place dough with a spoon on a baking tray linked with baking paper. Sprinkle with fleur de sel. Let rest 15 minutes.
Bake cookies 9-10 minutes.
