Baked feta with blackberries and beetroot syrup
Recipe serves 4
Preparation time: 20min

Beetroot syrup:
5 dl beetroot juice
60 g apple cider vinegar
100 g sugar
1 pinch of salt

Feta:
2 feta 180 g each
2 tbsp honey
5 sprigs thyme
Black pepper

1 bowl of blackberries
Radish sprouts

Beetroot syrup:
Reduce all the ingredients in a pan by 70-80% until a syrupy liquid is formed.

Preheat the oven to 180°C (fan oven).
Marinate the feta with honey, thyme and black pepper. Bake for 20 minutes.

Spread the blackberries over the feta. Drizzle with beetroot syrup. Garnish with radish sprouts.

Tipp

Beetroot syrup can be kept in the fridge for several months.
