Halloumi with zucchini, tomatoes and onions
Recipe serves 4
Preparation time: 20min

4 zucchini
1 red onion
3 cloves of garlic, slightly smashed
3 table spoons olive oil
salt and pepper
300g cherry tomatoes
250g halloumi, in slices
1 tea spoon chili flakes

flat bread
humus
plain yoghurt

Preheat oven to 200°C.

Cut zucchini in cubes and red onion into slices. Mix with garlic and olive oil. Season with salt and pepper. Spread on a baking tray lined with baking paper and roast 10 minutes in the oven.

Place cherry toamtoes and halloumi on the zucchini. Sprinkle with chili flakes. Roast another 15 minutes until tomatoes burst open and the halloumi gets golden.

Serve with flat bread, humus and yoghurt.
