Coriander pancake:
4 eggs
½ bunch of coriander, roughly chopped
1 tea spoon soy sauce
1 table spoon butter
Miso mayonnaise:
4 table spoons mayonnaise
4 table spoons plain yoghurt
2 table spoons miso paste
juice of ½ lemon
Cabbage salad:
1 red onion, sliced
1 tea spoon cane sugar
1 table spoon olive oil
½ red cabbage, cut in small strips
½ white cabbage, cut in small strips
juice of ½ lemon
1 table spoon soy sauce
Coriander pancake: Blend eggs. Add coriander and soy sauce. Bake pancakes in butter. Let cool and cut in strips.
Miso mayonnaise: Mix all ingredients.
Cabbage salad: Fry red onion and cane sugar 5 minutes in hot olive oil. Mis with remaining ingredients.
Mix coriander pancakes and cabbage salad and put on plates. Sprinkle with miso mayonnaise and arrange with coriander.
