500g cherry tomatoes
salt and pepper
1 table spoon icing sugar
dressing:
5 table spoons dark balsamic vinegar
2 table spoons soy sauce
1.5 table spoons honey
2 table spoons lime juice
1 chilli, finely chopped
9 table spoons olive oil
500g penne
140g fresh spinach
1 red onion, cut into strips
salt and pepper
Preheat the oven to 150°C.
Cut tomatoes in halve and put them on a baking sheet with backing paper. Season with salt, pepper and icing sugar. Bake for 45 minutes.
Dressing: Mix all ingredients.
Cook penne in salted water until al dente. Mix penne, tomatoes, spinach and onions with the dressing. Season with salt and pepper.
Serve this pasta salad with a spoon of ricotta cheese
