Ponzu sauce:
100ml soy sauce
5 table spoons mirin
4 table spoons rice vinegar
1 table spoon fish sauce
2 table spoons lemon juice
2 table spoons sesame oil
2 table spoons tahini paste
250g soba noodles
2 table spoons ginger, grated
1 chinese cabbage, sliced
1 cucumber, sliced
2 spring onions, sliced
4 table spoons sesame seeds
Ponzu sauce: Cook soy sauce, mirin, rice vinegar and fish sauce for 5 minutes. Sesaon with lemon juice, sesame oil and tahini paste.
Cook soba noodles in boiling water.
Heat ponzu sauce with the ginger in a frying pan. Add chinese cabbage and soba noodles, mix and cook for 3 minutes.
Arrange soba noodles with cucumber and spring onions. Sprinkle with sesame seeds.
