4 sweet potatoes
Orange zaatar:
15g sesame seeds
2g caraway seeds
2g fennel seeds
zest of 1 orange
3 twigs of thyme, plucked
½ tea spoon sea salt
100g cream cheese (Robiolo)
1 spring onion, cut in rings
4 table spoons croutons
juice of ½ orange
4 table spoons olive oil
½ chili, chopped
Cook sweet potatoes in salted water until soft. Let cool down slightly.
Orange zaatar:
In a pan without fat roast sesame seeds untill golden and give into a bowl. Roast caraway and fennel seeds, crush in a mortar and add to the sesame seeds. Add orange zest, thyme and sea salt.
Cut sweet potatoes in halves. Top with cream cheese, spring onions and croutons.
Mix orange juice, olive oil and chili and drizzle on the sweet potatoes. Sprinkle with orange zaatar.
