Gremolata:
1 clove of garlic
3 table spoons pine seeds
1 tea spoon fennel seeds
1 table spoon honey
3 table spoons raisins
200g feta cheese
2 table spoons dried chili flakes
1 small watermelon
babyleaf lettuce
Gremolata:
Chop garlic finely. Roast with pine seeds and fennel seeds in a frying pan until it starts to smell. Put into a shaker and add with the other ingredients. Mix with a blender.
Preheat oven to 200°C.
Cut feta cheese into four pieces and place on tinfoil. Sprinkle with olive oilt and chili flakes and fold tinfoil over. Bake 10 minutes in the oven.
Out of the watermelon cut 4 pieces slightly biger then the feta cheese. Place watermelon on plates and arrange with the babyleaf lettuce. Sprinkle with gremolata and put the hot feta cheese on top.
Tip: Bake the feta cheese on the barbecue.
