Preparation time: 30min

1 cauliflower
50g flour
5g paprika
2g salt
60ml oil

Dressing:
100ml olive oil
40g capers
1 clove of garlic
1 chilli, cut into rings
30g roasted pine nuts
1 lemon, zest
4 tablespoons lemon juice
½ bunch of parsley, chopped
½ bunch of fresh mint, cut into strips
sea salt

Cut cauliflower in small pieces and boil in salted water until al dente. Cool quickly with cold water.

For the dressing fry capers in hot olive oil until crispy. Add garlic and fry for another 30 seconds. Remove pan from the heat, add chilli and pine nuts and let cool. Season with lemon zest, juice, parsley, mint and sea salt.

Mix flour, paprika and salt in a bowl and sprinkle over cauliflower until slightly covered. Rub the seasoing in with your hands.

Heat up oil in a frying pan and fry a part of the cauliflower until golden brown. Repeat with the leftover cauliflower and keep the already fried warm in the oven.

Serve cauliflower with the dressing.
