Veggie burger with avocado

Veggie burger with avocado
Recipe serves 4

Burger:
200g tofu
70g canned corn
1 egg
½ red onion, finely chopped
5 table spoons breadcrumbs
1 bunch of flat leaf parsley, chopped
1 table spoon ketchup
5 table spoon cornstarch
1 table spoon curry
salt and pepper
breadcrumbs
oil

2 avocados
1 onion
2 table spoons lemon juice
2 table spoons olive oil
salt and pepper

2 tomatoes, sliced
iceberg lettuce
8 burger buns
ketchup or chilli sauce

Burger:
Smash tofu with a fork. Drain corn, chop with a knive and give to the tofu. Add egg, red onion, breadcrumbs, parsley, ketchup, cornstarch and curry. Season with salt and pepper and mix well with your hands. If the mass is to soft, add more breadcrumbs and cornstarch. Form 8 balls, press them flat and turn in breadcrumbs.

Slice avocados in cubes and chop the onion. Mix with lemon juice and olive oil in a bowl. Season with salt and pepper.

Grill burgers on both sides until golden. Cut burger buns in half and toast them lightly.

Arrange burgers with avocado, tomatoes and lettuce. Serve with ketchup or chilli sauce.
